Prep time: 30 minutes
Makes for 4-6 people
Ingredients:
- Palak - 6-8 cups (washed, steamed and water drained)
- Fried Paneer - 1-2 cups
- Grated ginger - 2 tsp
- Chopped green chilies - 1- 2 (depending on spice level)
- Paprika or red chili powder - 1 tsp
- Coconut milk - 4 table spoons
- Cumin seeds - 2 tsp
- Coriander seeds - 2 tsp
- Turmeric powder -1 tsp
- Salt to taste
- Ghee - 2 tablespoons
- Garam masala - 2 tsp
- Add ghee to a wide mouthed pan and saute cumin, green chilies, turmeric, coriander seeds for 1 min.
- When they cool, grind the spices into a paste.
- Add the cooked palak to the pan.
- Then add the spice paste and salt. Cook the spinach for 5 minutes and then blend it for smooth texture. This can also be left as it is without blending to preserve the original color and texture of the spinach leaves.
- Add the coconut milk, paneer cubes, garam masala to the palak.
- Cook over low heat for about 5 minutes.
